I am inspired by looks as I am by flavor. While perusing the stalls at the farmer's market, I saw these luscious green grapes and just had to have them. This time of the year, grapes are delicious. Inspired by these green orbs and their tart and sweet flavor, I wanted to pair them with all things green. This creamy pistachio cheesecake is luscious, rich, and light enough to pair with the sweet tang of grapes. For texture, some good quality pistachios are chopped. While I love toasting nuts to bring out the oils and flavor, I don't recommend that with pistachios. They are delicious as is, and once toasted are just a shadow of their former selves. For something extra, pistachio honey, made from 100% pistachio paste and local honey are mixed together. I love this easy and simple condiment for a strong and unforgettable flavor. A little goes a long way. To finish, dollops of pistachio cream are placed between the cheesecake. To get the glacier-esque effect, I love freezing cheesecake and then breaking/cutting them haphazardly while still frozen. Just a little something to make this dish different.
