Crepe cake layers that is. With some leftover ingredients, this dessert came to life. I had leftover green tea and pistachio cream and crepe batter resulting in a crepe cake. Making crepes is so therapeutic. With some PAM spray, an offset spatula, and several crepe pans, I can bang them out in a jiffy. I hate super thin crepes, you can't properly taste them when combined with the filling. These are a more thicker, substantial, and buttery crepe than is usually seen. It is so delicious when paired with the green tea and pistachio cream. On the plate are white pumpkin ganache, elderberry & st. germain sauce, lemongrass ginger ice cream, lakemont seedless grapes, and mint from chef's garden. It's prime time for grapes, and the lakemont seedless are my favorite. Every time I pick some up at the farmer's market, they disappear quickly as everyone in the kitchen has an excuse to "try" some.
